Canederli with Piave DOP and sausage

  • 4 stale bread rolls
  • 250 g milk
  • 4 eggs
  • 400 g Piave DOP (all types, grated coarsely)
  • 250 g skinned and browned sausage
  • 3 tablespoons plain flour
  • breadcrumbs
  • chives
  • salt and pepper to taste


Cut the bread into pieces and soak it in milk. After soaking it, squeeze it and add the grated Piave DOP, browned sausage, eggs, chives, salt and pepper, and mix. If the mixture is too soft, add breadcrumbs. Melt the butter with the sage over a low heat until hazelnut coloured. Shape the mixture into small dumplings, coat them in flour and cook them in boiling water. When your dumplings float to the surface they are cooked. Place them on a plate and sprinkle with plenty of Piave DOP, melted butter and sage. They can also be served in meat broth.
