Piave DOP iced mousse with strawberries and balsamic vinegar

  • 5 egg whites
  • 150 g Piave DOP Vecchio Sel. Oro
  • 100 g sugar
  • 400 g fresh cream
  • Balsamic vinegar
  • Fresh strawberries


Whisk the egg whites with the sugar in a hot bain-marie (placing a saucepan of water over the flame to heat and resting a bowl containing the egg whites and sugar on it to warm without direct contract with the flame) to form a thick smooth cream.
Add 120g of grated Piave DOP Vecchio Selezione Oro and transfer the mixture over a cold bain-marie (bowl with water and ice), continuing to stir until it cools. Whisk the cream and gently fold it into the cheese mixture. Arrange in 6 small bowls and place in the freezer for at least 6 hours.
Serve topped with balsamic vinegar, strawberries cut into wedges and a sprinkling of the remaining grated Piave DOP.
