Piave DOP Vecchio
This is a hard cheese with a cooked, compact paste and a crumbly, soluble structure. In addition to milky notes of melted butter, the aroma of Piave DOP Vecchio presents evident vegetal scents accompanied by the slightest of nutty nuances. The taste on the palate develops a complex ensemble which, besides accentuating the scents perceived by the nose, is enriched with toasted sensations. The flavour is characterised by sweet and savoury notes, which are less intense than in the case of shorter ripening periods and have greater persistence on the palate. The colour is more intense as is the thickness and hardness of the rind.
