Beef chunks baked with porcini mushrooms and Piave DOP Vecchio cheese

- 4 mini beef fillets
- Chopped sage and rosemary
- 4 slices of salted lard
- 1 leek
- Salt, pepper, EVO oil to taste
- 200 g Porcini mushrooms sautéed with parsley
- 200 g Piave DOP Vecchio
- 30 g butter
Seal the beef fillets over a high flame in a little olive oil, leaving them pink at the heart. Add salt and pepper and season with a mixture of sage and rosemary. Wrap them with a slice of salted lard and tie in place using a long strip of leek to hold everything together.
Place in a buttered oven dish. Then cover with Porcini mushrooms and top with scales of Piave Vecchio DOP. Ten minutes before serving, bake at 180 °C until the cheese is melted and the top is golden brown.
