Alpine lake trout with sautéed potatoes and Piave DOP

- 4 Alpine lake trout fillets
- 30 g plain flour
- 3 boiled potatoes
- 30 g butter flavoured with sage and
- A sprig of herbs: basil, thyme, dill,
- wild rocket
- 2 tomatoes
Cut the alpine lake trout fillets into three pieces each, season with salt and pepper, lightly coat in flour, and fry in extra virgin olive oil.
Fry the sliced potatoes in a frying pan with the flavoured butter, cooking well on both sides. Prepare some slices of Piave DOP cheese and tomato. Now, build a castle by alternating the ingredients, finishing with the fish.
Bake in the oven for a few minutes.
Serve with an emulsion of our aromatic herbs, extra virgin olive oil, salt and pepper.
